The California Burrito: or how alcohol (likely) lead someone to put french fries inside a burrito

My second culinary discovery in San Diego went the opposite direction down the street of authenticity, and took a sharp turn towards late-night junk food. The California burrito is something that I had never heard of before lunch with a co-worker, I assumed that he was just sharing an opinion about how the burritos in Cali were better than those found elsewhere in the country. Flour vs. Corn: The Tortilla Dilema

I know this will sound blasphemous to many people, but I have never been a fan of corn tortillas.

There, I said it, I’ve just had a lot of experiences with sub-par, overly thick, slightly gummy but somehow dry tortillas, with little to no flavor. I’ve found that while flour tortillas don’t really add anything to a taco or burrito, they generally don’t detract from the dish as a whole. My philosophy has been that while a good corn tortilla is an amazing thing, a decent/subpar one has the ability to drag the whole dish down with it. Conversely, while a flour tortilla is never going to elevate a dish to perfection, it is much harder to screw up a flour tortilla to the point where it is going to make the dish worse. Our London Adventure: Part 1

So K & I had a week between the spring and summer semesters, and wanted to travel somewhere as we weren’t sure when the next time we’d be able to take time off. The first plan was to go somewhere warm to relax, but neither of us are huge beach people and we decided that that probably wasn’t the best use of our last vacation time for the near future.

London was somewhere we had both wanted to visit, as neither of us had been before. I decided to surprise K by not telling her where we were going, only the dates of travel. A few days before we left I gave her the forecast for two locations (without names) so she could pack, the morning of our departure I let her know which location it was, and she only found out about London when we got to the airport. Porchetta Party

Two quick notes

  1. Sorry for being MIA for the past little while, it has been a pretty crazy few weeks. I’m going to start posing at least once a week beginning with this one.
  2. I’m taking another quick break from the around the world trip re-cap (only one or two more posts before it is all wrapped up.

Anyway, lets get down to the subject at hand, pork (more specifically The Food Lab’s porchetta). Ever since seeing the recipe, I knew that I needed to try it.
